At Fonda, the heart of our cocktail menu is dedicated to the Paloma, a drink deeply rooted in Mexican culture and beloved for its refreshing simplicity.
In Mexico, the Paloma is often considered the “unofficial” national cocktail, (somewhat controversially over the Margarita!), and is celebrated for its perfect balance of tequila, grapefruit soda, and a hint of lime. The Paloma holds a special place in the hearts of Mexicans as a quintessentially local experience.
We’ve elevated this classic with five variations that capture the spirit of the original. Among these, our Champagne Paloma —a luxurious twist, served by the glass or by the bottle – is perfect for sharing and celebrating. Ours combines mezcal and grapefruit with a reduction of white wine and champagne, offering a sophisticated take on the traditional.
Punchy
& Vibrant
For a tart and tangy profile, the Rhubarb & Gooseberry Paloma features tequila paired with gooseberry cordial and rhubarb soda, for a refreshingly complex finish.
Our Smokey Pasilla Chilli Paloma brings a punchy vibrancy, blending mezcal with pasilla chilli, verjus, and grapefruit soda. For a non-alcoholic option, the Plum & Pine Paloma is made with a unique combination of plum cordial, verjus, and pine and grapefruit soda.
And finally, closest to the original, our Fonda Paloma combines Ocho blanco tequila with verjus, agave, and grapefruit soda.
