The Fonda team recently embarked on an inspiring research trip to Mexico, immersing themselves in the vibrant culture, rich culinary traditions, and artisanal craftsmanship that define Fonda in preparation for the restaurant opening. This journey took the team from the bustling streets of Mexico City to the culturally rich heart of Oaxaca, exploring a mix of traditional markets and contemporary design studios.
The start of an adventure
Meeting a local culinary legend.
In Oaxaca, the team visited the lively 20 de Noviembre Market, renowned for its diverse selection of Oaxacan street food.
They sampled regional specialties like tlayudas and memelas, each bursting with unique flavours that capture the essence of the region. A mole masterclass with Juanita, a local culinary legend, provided an in-depth experience into the intricate process behind Oaxaca’s most iconic sauce. A mezcal tasting and tour at Lalocura, gave the team a deeper appreciation for the craftsmanship and complexity behind Mexico’s beloved spirit.
Tepoztlán and Cuernavaca, chef Santiago Lastra’s hometown were also on the itinerary, to explore the fondas of his childhood, in particulalry Los Colorines, a nostalgic favourite. They immersed themselves in the local eateries and flavours that have inspired Santiago’s vision for Fonda.

Beyond the culinary experiences, the trip also delved into Mexico’s rich tradition of craftsmanship.
A highlight was a visit to Fernando Laposse’s workshop, providing insight into the innovative designs that are integral to Fonda’s aesthetic. The team also visited the MA Studio showroom, where they admired the intricate woodwork and textiles that inspire Fonda’s design. In Oaxaca, a visit to the 1050 Collectivo introduced the artistry of local pottery, with a hands-on clay masterclass that deepened their connection to the materials and techniques that are central to Mexican design.
The dishes tasted and artisans met along the way have left a lasting impression on the Fonda team, the inspiration and excitement gained will hopefully be imparted to our guests and continue to shape Fonda’s offer, bringing a true taste of Mexico to the restaurant.
