Fonda serves regional Mexican classics through Chef Patron Santiago Lastra’s lens, focussing on British ingredients, creative preparation, and modern techniques.

Santiago Lastra
Fonda is the second restaurant from Chef Santiago Lastra following the critically acclaimed KOL.
Born in Mexico City and raised in Cuernavaca, he has worked at Mugaritz in San Sebastián, as well as with René Redzepi and Noma during their 7-week residency in Mexico.
Driven by a desire to build a community – restaurant team, local producers, suppliers, and guests – Santiago sought the perfect location and settled on London.
